Cranberry Pumpkin Bread
Ingredients
4 1/2 cups flour
2 Tbs. pumpkin pie spice
2 tsp. baking soda
1 tsp. salt
4 eggs
4 cups sugar
1 cup oil 2 cups pumpkin puree
2 cups cranberries
Directions
In a large bowl, combine: flour, pumpkin pie spice, baking soda and salt.
In a smaller bowl beat all 4 eggs. Stir in sugar, oil and pumpkin puree. Add this to the dry ingredients bowl.
Stir in cranberries.
Grease and flour loaf pans. I usually use mini loaf pans so that the bread cooks all the way through. Regular loaf pans work too.
Bake a 350 degrees for 60 minutes. Until a toothpick inserted comes out clean.
Cool 5-10 minutes. Remove from pans and finish cooling.
Finished product can be frozen for future use :)
